Northwestern Extract Company loves the New Year because with it comes new flavors. We have a few ideas of the trends coming in 2021.

Sweet flavors like cheesecake and chocolate cake will continue to be popular. Warm flavors like maplevanilla, and cinnamon sticks are a favorite for the winter months. Another flavor people will like is caramel and a combination of that around spices like a caramel gingersnap or caramel rum will be popular.

Nostalgic flavors will continue to show up in sweets, ice cream, craft beer, and popcorn. Flavors like s’moresCreamsiclecookies & creambirthday cakeSkittlesbubble gum and Blue Moon are the perfect addition for a sweet treat.

Another growing trend is the addition of spice or heat to flavors.Gingercinnamon, and smoke can be added to cocktails, energy drinks and bars, coffee, and craft beer. Adding fruits with heat will be big too, like a chili lime or a ginger clementine. Or try putting together a sweet and spicy combination like mango chamoypineapple habanero or honey chili.

Summer trends will include adding different types of teas and botanicals for a refreshing and clean combination. A black or green tea with a traditional flavor like limelemon, or orange is a refreshing take on the beverage. Consumers are expecting more products that target health and wellness, and flavors with fruits and herbs like strawberry basil or blackberry sage will suit this demand.

Asian inspired flavors, like yuzu and cherry blossom will continue to show up and in different applications like dressing, seasoning, snacks, and popcorn. Try combining these flavors with a more subtle flavor like peach or raspberry for an interesting yet familiar taste.

Innovative combinations will always attract new customers. Thinking outside of the box with cocktails, beer, chips, and ice cream will continue to gain traction as more consumers are looking for something new and exciting.
